Week 4: yeast breads

This week we’ll be making yeast breads. I’ve never been much of a bread baker, by inclination or skill, but given how much better I’m now able to make things like pie crusts, cakes, and biscuits after some simple overview-level instruction, I’m interested in what will happen with breads. On the other hand, it’s hard to imagine making better breads than Rustica, the bakery a few blocks away that makes some of the best breads I’ve had anywhere, ever.
