Northern Pike with Tomato Buerre Blanc

Got a good-sized piece of used (about-to-expire) northern pike and prepared it for lunch. No, it wasn’t as fresh as one might wish, but it was ok and with a nice sauce would be fine. Northerns are one of my favorite fish. They have a nice, delicate flavor, and I used to fish for them with my grandpa as a kid. I sautéed it in a little butter, made a buerre blanc made with white wine, a couple of small, fresh garden tomatoes wedged or chopped, garlic, and a dash of lime juice, and served it with orange beets. It was really, really, good.
