Basics II
Basics II has started. We’re practicing knife skills and cuts, which means prepping vegetables for the kitchens and our own later projects, although not nearly as much practice as I would like due to the large class size: if everybody dices an onion, that’s a lot of diced onion. I know what I’m doing with a knife, but I’m fairly slow and would not say that I have good knife skills.
Yesterday we made mayonnaise, by hand with a whisk. Like many other things, it was not as difficult as I had thought. And it was really good! I’ve never cared much for commercial mayo, but the stuff we made was really tasty. We may never buy mayo again…
